- 1 cup Makhana (fox nuts)
- 1/2 cup Almonds
- 1/4 cup Cashews
- 1 tablespoon Magaj beej (melon seeds)
- 1/2 cup Raisins
- 5 De seeded and Chopped dry Dates (kharik or khajur)
- 4 Anjeer or figs chopped in small pieces
- 2 tablespoons Pistachio
- 1/2 cup Jaggery powder
- 2 tablespoons Cow ghee
- 4 Cardamom pods
- 2 pinch Jaiphal (nutmeg) powder
Instructions to make to make Protein Rich Indian Granola Dust / Desi Granola
- First, heat a kadhai or pan. Add the ghee and let it heat. Add the makhana and slow roast till they are crisp.
- Remove in a plate. Similarly, slow roast almonds, cashews, pistachio, till crisp and remove on the plate. Chop almonds and cashews in small pieces.
- Again add some ghee and add the anjeer, dates, and raisins and slow roast till they swell up and become brown-pink. Then remove and keep aside.
- Then switch off flame and add the melon seeds and keep stirring till they are crunchy. If pan is not hot, switch on flame and roast on low flame.
- Now cool all to room temperature. Remove the seeds from the cardamom pods Add the jaggery, cardamom seeds and nutmeg powder to the blender and give a good mix till you get a fine powder. Remove in a deep glass bowl.
- Now add the remaining ingredients to mixer jar and make a fine powder.(You can run all the ingredients together in the mixer lastly for a more fine powder.) Then add this to the bowl and mix everything well till combined and you get a brown- beige colour powder. Now your Indian Granola Dust is ready. Eat just as it is or mix in warm milk for a delicious breakfast.
Also make it into kheer or porridge or use as a filling in gujia, cupcakes, and other baked goodies. Enjoy!
