My Kaju Kalash is a sweet This recipe is my attempt to make it delicious . The outside of the Kalash pot is made of sugar, milk, and cashew nut. For me these ingredients symbolize the love and festivity that my mom imparted every year in making Kaju Katli. I have filled the kalash pot with the mixture of paan gulkand almonds and then topped with leaf for mold and chocolate mold for nariyal to look like a complete Kalash to spread Health, Wealth, and Prosperity. These Kaju Kalash looked super cute.

Ingredients and spices that need to be Make ready to make Kaju kalash (stuffed with paan gulkand):

  1. For filling-
  2. 8 pieces Paan(betal leaves)
  3. 2 tbsp Gulkand
  4. 5 pieces anjeer
  5. 1/4 cup milk
  6. 1/2 cup raw cashews
  7. 1/2 cup raw almonds
  8. For Kalash pot-
  9. 1 cup regular cane sugar (powdered)
  10. 1/2 cup milk
  11. 2 cups raw unsalted cashewnut powder
  12. 1 tsp ghee

Steps to make to make Kaju kalash (stuffed with paan gulkand)

  1. To decorate:-. Kaju paan leaves chocolate with mould
    Use kesar/saffron/paan liquid dissolved in little hot milk to paint the design on or use silver varakh to decorate.
  2. Boil milk and add the anjeer till all the milk evaporates. Let it cool.
    In a food processor, grind nuts and anjeer together to make a mixture and add the paan gulkand mixture it
  3. Remove in a bowl and leave it aside.
  4. To make the kalash pot:
    Heat sugar and milk in a pan. Bring it to boil and simmer for 2-3 minutes.
  5. Add powdered cashew nuts and mix well.
    Continue cooking the mixture 3-4 minutes on low to medium heat. The mixture should not solid. It should be thick.
  6. Turn off the heat. Continue mixing so that the mixture starts to cool.
    Pour the mixture on silicon mat for it to cool. keep folding it so that it cools faster.
    As the mixture cools it will solidify further.
  7. Add 1/2 tsp. ghee on your fingers.
    Make a soft dough when you can touch it while it is still warm.. Place this dough in a hotpot to keep it warm and prevent it from cooling down and hardening.
  8. To assemble Kalash:
    Divide paan filling into tiny parts and roll them in a ball.
    Slightly grease the mold with ghee
    Take around 1 tbsp. of cashew nut dough. Roll it to a ball and flatten it slightly.
  9. Place paan stuffing in between.
    Fold the ends and place in the mold. Top with mold leaf & chocolate and press well.
  10. Place pistachios and almonds while still warm.
    Carefully take the mould apart.
    Leave the kalash sweet to cool and maintain it's shape.
  11. Repeat the process.
    When the kalash have cooled completely, decorate it with silver varakh & paint using saffron paan liquid.
